Beginning his musical life with piano lessons at the age of six, Andres later switched to reed instruments as he became more deeply involved with the strong revivalist jazz scene in Argentina during the mid seventies. With that stylistic jazz idiom, Andres also began playing the tenor, alto and soprano saxophones.

In 1978 he began his studies at the renowned Royal College of Music in London where he received an A.R.C.M. degree. During this time, Andres also formed his own group and recorded his first solo album for Spotlight Records as well as numerous recordings for the BBC. After completing his studies in England, Andres returned to Argentina for six years during which time he recorded two solo albums for CBS records.

In 1988, with the encouragement of Paquito D'Rivera and Carlos Franzetti, Andres moved New York where he joined the Lionel Hampton Orchestra; he would later become the band's musical director for six years. Also, beginning in 1993, Andres was a member of the United Nation Orchestra under the direction of D'Rivera.

In 1997 after recording the CD “Dizzy’s 80th Birthday” with Jon Faddis and Cyrus Chesnut among other jazz greats, Andres took his place alongside the world’s outstanding musicians that comprise the “Dizzy Gillespie Alumni All Stars”. Together, the All Stars continue to perform at the most prestigious venues and festivals.

As a sideman, Andres has recorded for renowned musicians including Slide Hampton, Paquito D'Rivera, Jimmy Heath, Nancy Wilson, The United Nation Orchestra, Claudio Roditi, Lionel Hampton and Al Di Meola, to name but few. As a leader, Andres recorded "Into The Light" on his first album for North American label, Reservoir RecordsM

In 2004, Andres formed a musical partnership with Japanese pianist Tomoko Ohno. While on tour in Argentina, Andres and Tomoko recorded the album "Shadows of Spring" for MDR Records, released in May 2005. In 2006 they recorded a follow-on to “Shadows of Spring”, also for MDR Records, released in late 2006.

As an educator, Andres has a deep experience that spans over thirty years of teaching in the US, South America and China, with his clinics being held at prestigious institutions such as the University of Idaho and the George Mason University in Virginia. His solo performances have taken him as far as Alaska, Singapore, Russia and several South American countries. From 2007 to 2012, Andres lived in Shanghai, China performing in a variety of settings within the local jazz scene.

Returning to New York in January 2012, he has rejoined the Dizzy Gillespie All Stars Big Band as well as focusing on his career as a soloist. To such effect, in 2014 Andres releases his latest solo album "Crosstalk" for One Trick Dog Records. He is currently active fronting his quartet presenting his most recent work.

In 2016, while commuting between New York and Buenos Aires, Andres was approached by film director Hernan Gaffet to participate of "Destino Jazz, Retrato de Andres Boiarsky" (Destination Jazz, Portrait of Andres Boiarsky) a biographical movie about Andres' life, soon to be released worldwide.
